Trash Compost or Something Else?

Vegetable Peels 1These are the bagged vegetable peelings I did not put down the garbage disposal.  It helps the watershed if we do not put these, egg shells, oil, grease, fat or gristle from meats down the drain.  But is it trash or compost?  You can take it outside and recycle it into the ground beneath the soil.  It can become something else.  Soup stock.  That’s right it can be turned into the soup broth and not be discarded.  Well, not yet anyway.

Look at it now.  See how pretty these outer casings are?  Find your stock pot, fill it at least half way or less if it is quite large and add these peelings and herbs or spices.  Bring to a rapid boil.  Reduce to lowest heat and cover.  Allow to simmer for an hour.  Turn off the stove and let it steep, just as you would a cup of tea.  Same concept.  Remove the peelings with a large slotted spoon.  Add fish, meat or poultry, freshly sliced veggies, noodles and cook at a simmer until done.  Now these cooked peelings are ready to be thrown away.Vegetable Peels 2
