Healthy eating is one of the things I like to do as well as eating lovely, fattening sweets and pastas. I’ll blame these cravings on my European ancestors. Now before I go food shopping, I write a condensed list of essential items. It’s been a painful endeavor to omit the chocolate syrup, ice cream, cereal bars, candy, chips and a good many other things I considered our staples of treats. This equates to more frequent stops at the grocery chain and an empty refrigerator. (No, it isn’t empty but it sure seems like it is.) These days we’re buying only the basics, because out of sight is pretty much out of mind.
To prove I’m being good here are pics of my lunch. My middle of the day is much later than most of your middle of the day hours. Earlier I cut some raw cabbage, tore apart iceberg lettuce, threw in one grape tomato, dashed EVOO and salt on top before tossing and voila. In the bottom of the fridge was a bag I had forgotten about. When I opened it I discovered a very sweet watermelon! Accordingly I have eaten the salad and am going now for the watermelon. Imagine red juicy veins of wetness running from mouth to chin. I’ll stand over the sink so I can delve into it like a kid.
I only allow my thoughts to linger on tempting foods for a few moments, before I bite into a crisp celery stalk or carrot stick. Munching fresh vegetables or crisp apples I discover that it isn’t long before I joyfully drift toward something that catches my interest. Remember, out of sight is out of mind … well almost.
