Olive oil, salt & pepper heated in a saute skillet. Add onions then tomatoes, then garlic, then eggplant, then squash and lastly rosemary sprigs. Slice a vine ripened tomato and spoon in your sauteed veggies. You cannot go wrong.

I have come into a whole new appreciation of Rosemary as a cooking herb. I can’t remember now (an obvious play on words) when I didn’t like to use it in my favorite dishes.
